translation: the blue clay of jura is the soil of choice for the savagnin variety. its here that it shows its originality to develop a very spicy taste and multiple aromas of nuts, almonds and curry. before becoming a "vin jaune" or yellow wine it must age for six years and three months in barrels without replacing the part that has evaporated during the aging period. a skin of yeast forms on the surface of the wine and protects it from oxidization, whence the term "vin du voile" derives. it should be opened in advance and served cool.
